“In Spain, preserves, or preserves in cans and jars, are not simply a matter of economic survival or a source of basic nutrition. Rather, the canning tradition is similar to keeping one of the most beautiful jewels stored in a safe. Variables such as the type and quality of salt, sugar, oil, and/ or vinegar used in the canning process, the season, and the region where the creature has been captured or collected, the cut or piece, the size or number of pieces in the tin, and even the quantity of time the product has aged, can affect the flavor and texture of preserves - which, like wine in a wooden barrel, improve in flavor over time. Some of the most valuable delicacies found in Spanish cans are sourced from the seas cold north. From the Cantabrian Sea and the Atlantic comes the Cantabrian anchovies, top quality tuna, razor clams, mackerel, sardines, mussels, octopus, squid and squid, and scallops. Many of these jewels are kept in beautiful glass jars so that they remind us of the preserves that our grandmothers made and stored for months, even years, in their pantries. Now is the time to open the safe.” - Paula Mourenza
The history
The initial idea was born in 1994 as a result of the initiative of Mr. Escuris Batalla, bearer of an experience of more than 50 years in the canning sector; project that has been carried on by their children backed by their father's advice.
“In 1996, after a whole life dedicated to the canning sector, and at 65 years old, I decided to start a new project by continuing with the activity that I learned from my father in the 1940s, and I am honored that my children are an active part of it.”
