Description
Coming from the Galician Rias (North-West Spain), these razor shell clams are purchased during the months of May and June. Once 24 hours have passed in our purification station, they are fried and packed by hand in the traditional manner.

These clams are what you will commonly find in the tapas bars of Spain. As they are products originating from the Spanish coast, they are in limited supply, which usually results in exorbitant prices. Their technical name is “ensis ensis” or “sword clams,” which name alludes to the shell's shape being similar to an old-fashioned straight razor. They are meaty razor shell clams in brine, absolutely delicious to enjoy as a starter. You may serve them directly in the plate with salad, in a salad style. Alternatively, you may want to warm them with garlic and smoked paprika for an excellent and more elaborate appetizer.
